Spicy Hot Potato Soup

Potato soup prepared from chopped carrot, chopped poblano chili pepper, chopped onion, minced jalapeno chili pepper, minced garlic, and ground cumin sautéed in olive oil. Tender vegetables combined with diced potato, fat-free chicken broth and coarse salt. Soup is simmered until potatoes are tender, and then combined with mixture of all-purpose flour and skim milk. After thickening, cheddar cheese is added to complete the dish. Individual servings are topped with crisp bacon pieces and chopped green onion.

Ingredients -

2 Bacon Slices
1 cup chopped Carrots
1 cup chopped Poblano Chilies
1 cup chopped White or Yellow Onion
2 tablespoons seeded and minced Jalapeno Pepper
3 Garlic Cloves, minced
1/2 teaspoon Ground Cumin
5 cups diced peeled Baking Potatoes
2 (14 1/2 ounces each) cans Fat-Free Chicken Broth
1/2 teaspoon Salt
1/3 cup Flour
2-1/2 cups Skim Milk
5 ounces grated Jalapeno Cheddar
2 ounces Light Cheddar
2/3 cup chopped Green Onion

 
Preparation:

1. In large pot, cook bacon until crisp.

2. Transfer to paper towel and set aside.

3. Discard all but 1 tablespoon fat from pot.

4. Add carrots, poblanos, onion, jalapenos, garlic and cumin; sauté until golden brown.

5. Add potatoes, chicken broth and salt. Bring to boil.

6. Reduce heat to maintain gentle simmer, cover pot and cook for 25 minutes; or until potatoes are tender.

7. In bowl, gradually whisk milk into flour until mixture is smooth.

8. Slowly whisk milk mixture into soup.

9. Cook over medium heat, stirring occasionally, until soup is thickened, about 12 minutes.

10. Remove pot from heat.

11. Add cheeses, stirring until melted.

12. Crumble reserved bacon.

13. Ladle soup into bowls and top with bacon and green onion.

 



Soup Making Tips -
Poblano Chilies

Poblano chilies are larger in size than most chili peppers and considerably milder than most. Poblano peppers are often stuffed like bell peppers with rice and meat mixtures and baked. The poblano chili pepper can be found in most supermarkets with the other fresh chili peppers. Dried poblano peppers are called ancho chili peppers.
